Simple Chicken Fried Rice

Don’t get us wrong, we all love a Chinese takeaway! However, if you’re looking for a lower cal version then this recipe is just the thing to hit the spot.

Ingredients

Serves 2

  • 2 chicken breasts
  • 1 chicken stock cube
  • 1 sachet of boil in the bag rice/1 microwaveable pouch
  • 100g frozen peas
  • 1 onion
  • 100g mushrooms
  • Light soy sauce
  • Garlic

 

Method

  1. Cook your rice; either boil if using boil in the bag rice or microwave if using a pouch
  2. Chop your onion, slice your mushrooms and dice the chicken
  3. Cook your frozen peas
  4. Spray a pan with frylight and add in onions with a little garlic for 2-3 mins
  5. Add in your diced chicken breast
  6. Once chicken is browned, add in mushrooms & peas
  7. Crumble a stock cube in a mug and add some boiling water (roughly halfway)
  8. Add stock mix to pan along with cooked rice
  9. Keep stirring until all water is dissolved
  10. Add a splash of soy sauce & serve
  11. Enjoy!
