Hebe’s Vegan Taco Boats!

Try out this healthy and delicious vegan meal!



  • 1 Bell pepper
  • 1 red onion
  • 1 Courgette
  • Chickpeas
  • Olive oil
  • 1 avocado
  • 1 tomato
  • 3 Taco Shells
  • Seasoning of your choice


  • Grab your bell pepper and cut it up into small strips
  • Cut your red onions & courgette up into small chunks
  • Grab a large tray, and line with baking paper
  • Pour your chickpeas onto the tray and make sure they stay to one side of the tray to make room for the rest
  • After that, add all of your chopped up ingredients onto the tray
  • Drizzle olive oil over your chopped veg and chickpeas and then add seasoning of your choice
  • Place into the oven at 200 degrees until all of the ingredients are cooked well
  • In the meantime start to cut up your avocado into small strips and your tomato into slices
  • Finally once your vegetables have cooked, take them out of the oven and begin to assemble inside your taco shells
  • Enjoy!
